Tip of the Week

Herb Salt.

I used to buy herb salt, but now I make my own it is very easy and you can control the amount of salt.
You need a pepper mill, which I half fill with peppercorns, use whatever ones you prefer I quite like the mixed ones, then I add rock salt about a teaspoon, then the dried herbs, I like to use ones I have dried myself, basil, oregano, rosemary, parsley, thyme, or whatever is at hand.
Give the pepper mill a shake and you are off. I find the flavour is much richer than the bought ones and it is cheaper too.
