Wheat- free steam pudding


This is the best one I have made so far, and it is so easy, try it, you can make it any flavour you like, I might try orange or lemon next time, I would have put dried fruit in it if I had any, but it was fine without. This is my own recipe, I have tried it with rice flour but seems to work better with maize flour.


3/4 cup of maize flour
2 des sp of gram flour
1/2 cup of demerara sugar
1 tsp baking powder
2 tsp mixed spice
2 tsp honey
1 egg


1. Put sugar, honey and spice into pan over a low heat until sugar melts, stir now and then watch it does not burn
2. take off heat, add dry ingredients
3.Add egg and enough milk so that the mixture is quite soft
4. Put into a greased bowl cover with foil
5. put in steamer and cook for 30 to 35 mins.
Steaming makes the sponge a lot lighter than baking in the oven.
