Homemade Tomato Chutney


Last week I bought a bag of organic tomatoes about a kilo, this week I had about 10 left and they were getting soft, and as I do not like to waste anything decided to try and make a sort of chutney, really pleased with the result I achieved with little effort.


skinned and chopped tomatoes

finely chopped onion

grated garlic clove

olive oil


1. Put a little oil in pot, add onion and garlic, cook over low heat until soft.

2. Add tomatoes, stir and cook over low heat for about 40 mins, stirring occasionally, until it thickens and looks like chutney, season then it is ready.

It tastes great, and has many uses, I used it with tuna when I made samosas. Can be used as a pasta base, or pizza base.

It is also good on toast with some fresh basil on top.

In fact you can use it anytime you need a base sauce, like for curries or casseroles .
