The next thing I wanted to change was the way I eat, although at the moment I think I have a good healthy diet there is room for improvement. My task is to try and make my kitchen as eco friendly as possible. Firstly I would like to get rid of my plastic containers and use glass, I had some mason jars already , so I got rid of some plastic and used them for to store some of my cupboard ingredients, also used some smaller glass jars for my spices. I still have a long way to go, but hope to replace all the plastic with either glass or stainless steel eventually.
Now the task I am most excited about at the moment is I am trying to make everything from scratch I do make all meals from scratch, but I am now making my own stock, tahini, blend of spices,jams and potato waffles.
I recently bought a waffle machine still experimenting, but things looking good so far.
This morning I made date jam for the first time, and tahini.
Date Jam Recipe
50 g dates
120ml fresh apple juice (this was one apple juiced)
1/2 tsp vanilla essence
1/4 tsp cinnamon
1. chop dates finely.
2.Put all ingredients into a pot , bring to boil then simmer for 20 mins. Stirring now and again.
3. Pour into sterile glass jar.
I only made a little to see how it was going to taste and how long it would last. Let you all know later.
This is an amazing cake. It is wheat free. I have been having a slice for my breakfast, it is really quite filling and very tasty.
1 egg beaten
1/2 cup apple sauce or any fruit sauce
1 1/2 cups of milk
1tsp vanilla extract
2tbsp olive oil or coconut oil
1 apple chopped
2 cups rolled oats
1tsp baking powder
1/4 tsp salt
- Pre heat oven to 190 degrees.
- combine egg, applesauce, milk, vanilla, oil and apple in a bowl.
- combine oats, baking powder, salt and cinnamon in another bowl.
- add liquids to solids mix well.
- pour into dish, bake for 25 mins.
- top with Demerara sugar bake 4 mins.
- cut into eight slices.
This cake can be frozen in portions, I wrap them in tin foil. I usually heat mine in micro for about 30 to 40 seconds, and you can add milk or yogurt if you like.
You can use any fruit you like, but I like apples it tastes a bit like apple crumble to me.
This was a recipe that was on Ben Booths fat loss challenge, it is so easy and so good to eat.
a little oil for frying
1. Whisk eggs and banana, until it is smooth
2. Put a little oil in griddle
3. Place a spoonful of mixture in griddle, depends on the size of your griddle how many you can cook at once I can get 4 at a time in mine.
4. When bubbles appear on top turn pancakes.
5. Once cooked take out and stack on a wire tray to cool slightly before eating.
These are so good for you, and you can have them for breakfast with berries or as a snack throughout the day.
You could add honey, but I think they are sweet enough without.
If you want you can double up the recipe and make enough for another day they keep fine in a container in the fridge, that is what I did this morning.
Sweet potato ” The worlds healthiest food”.
Lately I have become fed up with the quality of potatoes I have been buying, not all the same type in the bag, most rotten inside when you cut them, so decided I needed a change.
Over the years I have used sweet potatoes, in soups and curries, but not really as a vegetable or substitute for potatoes, I like rosti potatoes so thought I would give sweet potato a try and it was really good, kinda replaces toast for me for breakfast as I am wheat intolerant and this is great to dip in your soft poached egg.
There are many health benefits, loads of vitamin A which is good for your skin, vitamin C which helps boost your immunity, beta-carotene, calcium and potassium. Also sweet potato has a low GI rating, which helps balance your sugar levels.
There are many different varieties of sweet potato available, white ,orange, and purple , at the moment I have tried the white and the orange, I found the orange sweeter but the white creamier when mashed.
To make the rosti I just took the skin off the sweet potato and grated it with a fine grater onto kitchen roll patted to remove excess water then fried in olive oil.

Look what I had for breakfast. I never used to eat breakfast,and still find it difficult to eat when I first get up, so I usually have a cup of hot water with a slice of lemon and some honey, and then make breakfast. Breakfast is a really important meal it sets you up for the day ahead, if I don`t have a good breakfast I struggle, not to snack on unhealthy food because I’m hungry.
This is what I had this morning.
Boiled egg, white anchovies, Cheddar cheese just a few squares, cherry tomatoes, spring onions, sweet corn, rocket, rye and sesame cracker, drizzled with natural yogurt and chopped herbs ( Rosemary, Thyme, and Parsley, form my garden ) No need for salt, you get enough from the anchovies and cheese.
This breakfast was inspired by Andre`s blog “Don’t dig your grave with your own knife and fork”. Looking at her blog I realised that you can have what you want for breakfast, you don’t have to stick to what is traditional, you can use up what is in your fridge as I did this morning, give it try you will be surprised, how good it is and how fulfilling, and of course it is healthy.
